Stevia chocolate


       chip coffee cake




    Ingredients                                          Method



                                                          Set the oven to 180°C put the butter,
                                                          Stevia and eggs in a large mixing bowl.
      150g butteror margarine                             Sift in the flour and baking powder, and
                                                          add the coffee essence. Whisk together
                                                          for 1-2 minutes until the mixture is

      150g self-raising flour                             Divide the mixture between the two tins
                                                          and spread evenly. Bake in the centre of
                                                          the oven for 25-30 minutes, until well-

                                                          risen and firm to the touch. Turn the
                                                          cakes out on to a wire rack to cool.
      2-3 tablespoon coffee essence


      ½ teaspoon mint ext


      Chocolate chip (dark)



      1 tablespoon raisins or Sultanas
